Something like this happened in my small engine class. Some kid didn't fill up a snowblower with oil and I caught it soon enough while the engine was running to shut it off. You could smell the rings burning. I told him to fill it up with oil and he did. He started running it again and oil went everywhere. He didn't put the drain plug in. He is know known as dipstick.
I don't care how expensive or cheap a shop is, you ALWAYS double check their work. While that could happen to anybody...check everything. Don't leave until you done a pretrip as it were. I do that with all my rigs. Before I drive anywhere.
Make em pay for it
Their mistake, their damage, they should give you a new engine for free.
Any time I take my truck to the shop for oil change or any fluid change I check the dip stick soon as they get it to me same on changing tires I always check to make sure they don't switch a bad tire for my spare

It was their mistake, their damage, they'll cover the cost. Bring it up to them with proof, escalate the problem if needbe, and go to court if it gets that far (it won't, they'll fix it).
They should be willing to compensate for that, but FYL for having to wait for that process to be complete.
