I had just started restoring it when I got it, and nobody would insure it when I got it. it looked like a junkyard heap of shit, I just got it back the day before I broke up with her. still have the burnt up shell in my drive way that I have to dispose of :(

If you've invested enough money into a vehicle to restore it, you should have gotten it insured long before it was "finished". It's incredibly cheap since the vehicle is not yet on the road, and would have covered this. Get yourself a good lawyer and start proceedings to sue while you're waiting for her to be prosecuted for destruction of property.
sue her for double the money if you have evidence that it was her i'm sure burning a person's car is a serious enough charge
For what it's worth, see if your home owner's insurance will cover this. If it was parked in your driveway, I do believe it can cover this sort of thing. Else, sue her ass.

Hopefully she's been arrested for arson, and possibly even a few other charges? I mean, this is way worse than the bitches who go "Tee-hee I knoked ur xbawks over becus u pay more attenshon to it than me" and then are stupid enough to post it on Youtube. Girls who think that it's okay to punch guys or slap them or destroy their property: you aren't cute and it is just as bad for you to do it as it is for a guy. Guys, if any girl ever does that, leave her and call the police. Not because you're afraid for your life, but because you can't hit her back without getting in trouble, and they almost always charge the other person as long as there's evidence and you are the one who calls.
