I know my language change thing by heart on my phone and iPod so you need to spend time on your phone more!
The steps are exactly the same as in English, so just Google it or borrow someone else's phone and compare them side-by-side.

It isn't that hard, especially if you know how to get to your settings. Just play around with it and you will eventually come to an option to change the language. If you are using an old school phone, search for "English" in Chinese writing to get back to the default language. If you are using a smartphone, it is even easier with the icons next to the main menu for the settings screen. Good luck!

Duh..? Depending on where you are in Canada, it might be easier to find a Mandarin-speaking iPhone user than an Anglo iPhone user. If you can't find either one, try your iPhone QuickStart user guide. FYL.
