She is an old woman who grew up in a time where racism was the norm. If she loves you, she'll make an effort that'll give your fiance some time to conquer her :-) Your fiance's obvious love for you will help her to accept him and confront her fear of black people. Give her time, explain the current situation to your fiance and don't accept any rudeness from her. Also, don't dismiss her: she doesn't know better :-(
if she hasn't met him, why did you not show her some pics instead. not to show that he's black, but bc people usually show off their partners if the family or friends aren't able to meet them right away.

i would try to have some understanding for your grandmother. almost all racism is routed in either or both ignorance and hurt. I know a lot of my older family members are the same way. I have tried talking to them, but nothing really helps. I eventually had to tell them that i love them, but they have to accept this be nice to my significant other. I bet your grandmother will be able, with time, to keep her feelings to herself and move on

That sucks. It's similar to the feeling "oh shit my boyfriends parents are hardcore Catholic and I'm Wiccan." But in the end if you love him then I wish you two a good life if your grandma approves or not.
