This is why you type essays instead.......
That's terrible when I was teaching I used a check sheet so I would know if students had turned in their work that way if I lost it they would get an automatic 100 for that assignment.

You're in high school (or middle school). Your essays are like 5 pages max, so relax and be happy you aren't in university with 15 page essays.
You have no way to know ANYTHING in this situation apart from what this person has told us. OP could be doing their master's degree- and it's understandable that OP would be upset that their teacher just destroyed their work and then lied about it. I would feel the same whether it be a 500 word piece or a 5 page piece.
You should definitely call her out on it, point out your essay, go over her head if you have to. Why did you hand write it though? Why would you not type it up too? That's just stupid. FYL and YDI.
So point it out? I highly doubt you'll have to redo it if you make it clear that you know what she's doing.

The fact she's giving you one day to re-do an essay SHE lost is already showing how "great" of a teacher she is, which doesn't really make the next bit surprising. Had she actually lost the paper, she should at least give you more time to re-write it. FYL, OP.
