Point it out to her and try to get her to work with you. If that doesn't work, you can try reporting it to someone above her, but as miserable as it may be, you're probably just going to have to rewrite it. Take it back, and try to find anything that's readable in it you can use to write a new one. I'm sorry that happened to you though, it really sucks.

I've actually heard several stories about teachers losing students' homework assignments and blaming it on the students. It blows my mind.
Yeah, it happens all the time. Last year I had to redo a science paper three time because the teacher lost it or misplaced it or as she liked to say "You never handed it in, you are lucky I'm letting you do it after the do date." I had three witnesses saying I turned it in. Finally she graded the third one and I still got 20 points deducted for not turning it in on time. I hate teachers like that.
Who asks for handwritten assignments in the first place???When I was in high school we would get in trouble if it wasn't typed.

The fact she's giving you one day to re-do an essay SHE lost is already showing how "great" of a teacher she is, which doesn't really make the next bit surprising. Had she actually lost the paper, she should at least give you more time to re-write it. FYL, OP.
