There are some rides you get paired with strangers, and you might have a chance to talk to them. There are a bunch of rides like that, but a roller coaster definitely not your best option. As many others have mentioned people generally go with friends to begin with. Unless, you struck up a conversation in line it's unlikely. The sit and wait idea doesn't often lead to anything.
It doesn't mean anything. People go with friends to amusement parks. But if I were there, I would sit next to you.
Why are you looking to meet people on a roller coaster? Can't say I've ever had deep conversations with a stranger on an amusement park ride. That's a bit of a FML in and of itself.

Personally if I had the option of sitting by myself or sharing the seat with a stranger Id sit by myself as it would seem a little but creepy to me to sit next to a random. Then again if I have gone to a coffee house and see someone that needs someone to talk to I will sit at a table next to them and ask how there day was, one day someone, an elderly lady just lost her husband of so many years and all she needed was a shoulder to cry on. I wouldnt take it personally op, maybe people felt awkward :)
When I go on roller coasters I'm usually with friends and have someone to go on with. Don't take it personally. It's kinda like going to lunch and expecting someone to want to sit next to you
