Deeper'd be cheaper, but digging a horse sized hole 8 feet into the ground (6 feet is the depth where coyotes and the like can't smell it, another 2 cause horses are big) would be damned hard work. OP loses no matter what. Or home cremation. Lighter fluid OP, nothing could ever go wrong.
Dig a deeper hole, bury your horse, cover it with a layer of dirt, then before you cover it up completely, make a layer of 2x4's or bear traps, the choice is yours.

OP, simply place some large rocks on top of the grave like they did when they burried the dog in "Old Yeller" and it will prevent animals from digging through the soil.
