I'd probably have snatched it back and said, "Well, that was my last dollar you ungrateful, pathetic excuse for a human being, I'll have it back because I'll appreciate it more than you obviously did." Then run like hell because as little as he appreciated it, he wouldn't want to give it up.
I am not defending him: that was a lovely thing you did OP and he should not have said what he said. I suppose, playing devil's advocate, he could have been feeling that a dollar wasn't enough, maybe he was worried about not having enough for the hostel or food and had been ground down by this being his day to day life. Maybe he felt people had a lot of money compared to him and a bit more would have made no difference to them but a lot to him. But that would be me assuming an awful lot and it would not excuse his reaction at all. Thank you for trying to help OP. I tend to buy homeless people food rather than money so they cannot spend it on drugs. It isn't always what they need though, but they are always grateful. Perhaps a homeless charity is where we should both be putting those bits of cash rather than to the person directly?
Let's not defend the guy who just called a woman who gave him a dollar a ****. I'm pretty sure anyone who was that ungrateful isn't really on hard times but is working a scam. I agree, however, with giving them food or something to drink instead of money. The ones who are truly desperate will appreciate it.

Omg something similar happend to me. I once gave a poor man on the street a coin cause it was ALL I had (as a reference it was like half a bus ride here, not much but still) and he threw it to MY FACE. :( I had to pick the coin up from the floor cause I might need it. I was angry at first but after time... i thought that maybe that man had some other issues. Poor guy. Maybe the man that said that to you had issues too.
