I hate to be the one to say this.. But a lot of Quebec speaks English. However, you'd have a better chance of meeting someone who speaks French in Canada.
Hahaha!! Sorry, it's just that I'm in Montreal right now for university so I find this HILARIOUS. the vast majority of Montrealers speak English. AND French, too, but this IS Canada, so English is more widely spoken. It's hard to find someone who only speaks French.
