I don't get her behavior at all. It's called a free world and you can park where you want. Plus it's better to park by another car more chances of being spotted if someone tries to break into it
She must have felt crowded by OP. Something tells me this isn't the first kind of thing to happen and she's probably tired of it.
Big fucken deal so you parked next to her Sorry op but if she got upset over you parking next to her then she's not worthy to be your girlfriend. Because as I remember it any normal girlfriend would want you to park next to her. I remember my girl being that way and I found out that she was cheating on me and and she found it awkward to be near me. So do yourself a favour and find a girl that will want to treat you right

Kinda hints to that she's not interested, at all.
I would've explained that you park to already parked cars, because it cuts the chance of your car being hit in half. Think about it if you park between two empty spots, then when someone is parking in either spots they can hit your car, but if you park next to an already parked car then there only one chance of your car being hit.
Here's the thing. She reacted that way for a reason. What could it be? (Hint: she didn't want him to park next to her... Why? She knows how he feels and is not interested.)
Creep
Maybe you were parking next to her in an effort to be friendly. That way you would be able to greet her with a walk into work. For her to assume instant "creeper status" is a knock against you and certainly not the type of judgement you need from someone you like either as a friend or more.

I got to say that is a little creepy. You could've parked one or two spots down from her. Then if you saw her in her car you could act like you're looking for something until she got out. That way you could walk with her to work and have a casual conversation and maybe start something.
