A selfish, entitled brat? My brother does this as well. No matter what is done or said.
I'd put him off his hinges too if I were you...
I had to move back in with my mother and adult brother a while back after losing my job, and I can tell you, it seems to be a running theme for siblings to do this. I locked the fridge AND my basement door, and somehow my brother managed to get the second pair of keys when they were unlocked, when I was home, and could come and go whenever he wanted. I changed the locks AGAIN but I can only assume he'll try something again. I know he's able to break into the basement with a knife in the door, but not the fridge as far as I know. Nothing I've said or done has stopped him and my mom is useless. Low-lives will never change, I guess.
Trap your basement door so that next time he opens he door, something hits him in the nads. It might change his mind.
I'd probably have put the minifridge in my bedroom and put a deadbolt on the door by now.

Laxatives work great for food a thief.
Try putting laxatives, or something similar into a third of the food. Put a note on the fridge saying that a third of the food will put him on the toilet for a month, and only you know what is laced with laxatives, and what isn't. Let's see if he takes the risk...
Make him pay to fix/replace the broken mini fridge, if he refuses, break something of his, still refuses break something else until he caves. Also follow what others have suggested and leave some trick food in there. Your brother may have won this battle, but the war will be yours.
Respond by breaking his thumbs.
