you can make gluten free products now. Heck if you do that you might get a bigger clientele. Think of this as a sign.
Gluten free isn't that bad! I was diagnosed a year and a half ago. There is gluten free flower. Become gluten free bakers and you will have an entire new appeal to customers and a step up on all other bakers in your area. If one person in a family is gluten free that family won't go to bakeries or eat out unless they find one even the gf member can have. It's new at first but not that difficult. Plus it is healthier! i was diagnosed with celiac in 2008 and i had no problem with changing my diet. I actually like a lot of gluten free foods more then the regular stuff ;). im almost 15 now and i love to bake new things. it just gives us more reasons to bake and try new things. :)

You don't need to cut out the wheat, just make your daughter her own special bread and other food when you cook/bake and make sure she doesn't eat the stuff with wheat in it.
You should create a fantastic gluten free bread and name it after your daughter!

It is possible to have gluten-free flour, I believe. You could even specialize in making bread for those who have intolerance of gluten.
