Problems and setbacks usually are the breeding ground for great, wonderful solutions and new ideas. I can see this as a plot in a movie or an Oprah interview. You guys explaining how your daughter's gluten allergy forced you to learn new gluten free baking styles and this resulted in you inventing new gluten free foods. The news got hold of this, and pretty soon baking manufacturers were coming to you, wanting to ink deals for brand named gluten free products, and now you're one of the most sucessful lines in the world. And you both hug your daughter and say this was all borne out of your love for her. The audience coos. Oprah tears up. Lifetime approaches you with a "Lorenzo's Oil" type of movie deal. Wonderful problem (in my imagination)!

It is possible to have gluten-free flour, I believe. You could even specialize in making bread for those who have intolerance of gluten.
