You do realize that muscle burns more calories then fat. So try hitting some weights instead of just the treadmill... it's been working for me.

Find out your bmr and eat below that. for those of you who dont know what that is it's how many calories you can eat with out gaining weight.
That's not what that is...your basal metabolic rate is how many calories your body uses just keeping you alive and functioning, not counting your normal daily activity. If you were bedridden, then yes, it would be the number of calories you could eat without gaining weight, but if you move at all during the day, you can (and should) eat more than that. Going below your BMR is generally a bad idea.

You may have PCOS. I know how you feel, I is really hard to loose weight. I know a doctor who could help if you are interested.
But are you under medication for PCOS? If the OP was undiagnosed, it could be messing with her. My mom was undiagnosed, and she went on birth control in its early days. She didn't change her diet, and actually started exercising MORE, but gained 30lbs in a month. She got shin splints from running but still gaining weight. Even today, she gains weight on 1200 calories a day. I'm diagnosed PCOS, and that made a world of difference. Now that I'm on the right hormone dosage, I don't crave sugar at random intervals, I can skip a meal if I need to without passing out, and while I still have to watch my weight, I don't just keep gaining. When I wasn't medicated, I did a health assessment with my activity level and was told to eat 2200 calories a day. I was gaining weight on 1800. I can't tell things to the OP because a quick intro isn't enough to critique her situation, but having uncontrolled PCOS could have made her situation more difficult.

if you weighed yourself right after it was just the food. but if you waited till morning then that just plain sucks

How long have you been on your new diet/workout plan? Have you been keeping track of your measurements? You do know new muscle weighs more than lost fat, right? and if you weighed yourself the same day as your buffet, the added weight is just food in your intestines. Why do people always associate successful health plans with numbers on a scale?
How long have you been dieting? If you really haven't lost any weight perhaps you should see a doctor.
