Nothing worse then the letter "k" for response
Why not call her? Better yet say it in person? Not saying that you deserved this at all, because your heart was obviously in the right place. But still, I personally wouldn't be too moved if my girlfriend sent something like that over text. She was probably one of those people. That being said, I find it incredibly rude for someone to reply with just 'k', especially if you send a text telling the person how much they mean to you.

That's a lame thing to do for a two year anniversary. Next time write a letter. It's more personal and takes more time than pushing a few buttons. AND she can't reply with just "K" :P
