My sister has Celiac and her father makes all of her breads. It's easier than making regular bread and it's not that hard. You're bakers, use Google and stop complaining.
So offer gluten free to your customers. Many people are gluten intolerant or have Celiac's. My eldest is severely allergic to dairy. You just learn to live with it. Good luck.
I make gluten free baked goods all the time and people don't know the difference from ones with wheat flour. I know quite a few people with celiac disorder. don't say FML it's easy to switch her diet without altering yours too much. make gluten free stuff for those customers who can't digest gluten as well I know of several bakeries that make gluten-free things.
I found out I'm gluten intolerant about a year ago. Its not that bad. More expensive to buy food, but hey, I'm not getting sick off of what I eat anymore. They have some good flour out there now that works the same as regular wheat floor. Look up C4C (cup for cup) flour. Red Mill works moderate too but you have to add zantham gum and other additives to make it work. You can still bake gluten free and make it taste uber yummy. You just have to change the products you cook with.

Why do you have to cut it out of all of your diets, instead of just your daughter's? Also, it's possible to bake gluten-free food.
It is possible to have gluten-free flour, I believe. You could even specialize in making bread for those who have intolerance of gluten.
